It is the regulations' part. The second 6 hours helps managers reach conformity in the work place through a set of practical tools and tips.

Mapaq Manager of food business training target student

This course is aimed at people who will be responsible for hygiene and safety in the eyes of MAPAQ

In general, at least one person who has completed this course is required per license issued by mapaq. The person taking this course can be the business owner but can also be his or her delegate.

Mapaq Manager of food business training content (in person)
The first half is really the Food Handler training. This makes sense and allows for all on site trained people to talk the same food safety language.

For this first half, in addition to the content of the Guide, you will find some explanations on microbiology and other tools.

Content of training:

  • Food storage temperatures

  • Working methods to avoid food contamination

  • General principles of hygiene applicable to any person who is in contact with food or with material or equipment that is in contact with food

  • Procedures for cleaning, sanitizing or disinfecting materials and equipment

  • Environmental sources of food contamination

  • Microbiological, physical and chemical risks linked to hygiene and food safety

  • The origin of food

  • Food labeling

  • Risk analysis and assessment (hazard assessment)

  • Risk management (implementation of appropriate controls and procedures and establishment of corrective actions where necessary)

  • Legal and regulatory standards relating to hygiene and food safety

  • The development of continuing training activities with regard to hygiene and food safety rules

  • Practical advice taken from Quebec university management training courses that are relevant and specific to our company.
